Polpa, Passata, Rustica whats the difference?
For Polpa, tomatoes are peeled and finely chopped. Passata and Rustica, on the other hand, are made from unpeeled tomatoes that are first crushed and then strained. The size of the strainer determines whether you get the smooth Passata or the slightly coarser Rustica.

Production
The tomatoes are harvested when they are sun-ripened and processed locally immediately after harvest. This ensures their wonderful flavour, vibrant colour, and valuable nutrients are preserved. Using a traditional, artisanal method, the aromatic fruits are cooked down
