Naturata organic molasses yeast flakes consist of 100 % pure organic yeast, cultivated on sugar beet molasses. The yeast flakes have a high vitamin B content (B1, B2, B3, B6, B9). Since these vitamins are extremely heat-sensitive, the molasses yeast flakes should not be cooked with the food, but only added to the finished dish.

Production
In contrast to organic yeast extract, conventional yeast extract may be treated during the production process. The addition of acids (cooking salt, hydrochloric acid) and neutralisation with (caustic) soda lye accelerate the self-digestion process, the so-called plasmolysis and acidic hydrolysis of the yeast cells. In addition, vitamins, minerals and nitrogen compounds may be added to the culture medium, which explains the intense flavour of conventional yeast extract. On the other hand, no additives may be added to organic yeast extract. Autolysis takes place naturally thanks to enzymes present in the yeast and results in a longer production process. This increased expenditure means that the price of the organic product is slightly higher than that of conventional yeast extract. Furthermore, the two products differ in their vitamin B content. This is somewhat lower in the organic yeast flakes than in the conventional product, since only specific culture media may be used, and the use of additives from amino acids, vitamins or minerals is not permitted.
