Production
Naturata mustard is produced using traditional artisanal methods in Switzerland. To make it, the Demeter raw materials are first subjected to a careful incoming inspection and cleaning process. Next, the mustard seeds are coarsely ground between rollers and mixed with water, vinegar, salt and various spices. The resulting paste is allowed to mature for a time. The effect of mixing with water allows enzymes to release the essential oils of the mustard which are responsible for its typical flavour. The spiciness of the mustard is determined primarily by the choice of mustard seed. Whereas the yellow mustard seeds of the white mustard taste milder, the black mustard gets its hot, spicy flavour from the its dark brown seeds. The composition of the paste and the length of maturation influence the taste and quality of the mustard. After the maturation period, the paste is finely ground until the mustard has a creamy consistency.
