Production
Naturata Aioli is made with only high-quality Demeter sunflower oil which has been pressed gently, without the application of heat (cold-pressed). Before processing into the aioli, the sunflower oil is deodorised using steam. As a result, the storability of the aioli is improved and the delicate flavour of the aioli itself is not masked by the aroma of the oil. To make Naturata Aioli, the remaining ingredients are mixed with sunflower oil and thoroughly homogenized. The sunflower protein serves as an emulsifier which allows the fatty and watery ingredients (oil plus vinegar and water) to combine more effectively into an emulsion. This step requires a lot of experience and skill.
