Production
Sucanat whole cane sugar comes from a number of small farms in Latin America, often from Costa Rica. The climatic conditions there are ideal for the cultivation of sugar cane. Since sugar cane has to be processed immediately after harvesting, Naturata sources its raw material from the region with sugar mills capable of producing the relevant sugar type. This sugar contains the entire molasses content of the sugar cane. After harvesting, the sugar cane is stripped of leaves, chopped, crushed several times between simple rollers and the juice extracted. The plant fibre is filtered off. To bind microscopic particles in the sugar-cane juice, it is clarified with a tiny amount of slaked lime. The juice is gently thickened in a vacuum at low temperature. Following concentration, the cane syrup is dried in a vacuum at a maximum temperature of 90 °C, ground, sieved and filled into jars.
Tips for preparation
Whole cane sugar is particularly suitable for sweetening hot drinks and desserts, as well as for cakes, for example, nut cakes.
