Production
The pumpkin seeds are brushed clean and then ground in a stone mill. The resulting pulp is mixed with water and roasted in a pan containing a stirring blade. The choice of correct temperature and roasting time make for the distinctive flavour of a pumpkin seed oil and are down to the experience of the oil miller. The pumpkin seed pulp is then pressed in a stamp press. The oil extracted in this way is stored for several days, until the suspended solids have settled, and is then bottled.
Tips for preparation
Its rich, nutty flavor adds a special touch to soups, salads, and even desserts.
