Naturata Demeter olive oils are designated according to the quality class "extra virgin". This guarantees that a number of quality parameters are adhered to. Only mechanical methods are used in oil production. The limits for acid value and peroxide value are strictly regulated. Furthermore, no sensory perception errors should be detected. The acid value indicates the proportion of free fatty acids (calculated as oleic acid). The longer an olive is stored between the point of perfect ripeness and processing in the oil mill, the higher the proportion of free fatty acids. The lower the proportion of free fatty acids, the better the quality of the oil. A low peroxide value is also an indication of the rapid processing of the olives and the freshness of the oil. Only if it possesses optimum values, can an olive oil be designated "extra virgin".

Features:

The olives come from the Italian farm Azienda Agricola Francesca Surdo run by the third generation of two families in the heart of Calabria in southern Italy. The olive grove lies against the fabulous backdrop of the WWF-protected lake in the heart of the "Parco Nationale Delle Serre" nature reserve. The trees on the 160-ha Azienda Agricola are between 150 and 200 years old and can grow up to an impressive ten metres in height. Younger olive trees grow under the cover of the older ones, thereby safeguarding this culinary pleasure for decades to come. The variety used for the Naturata olive oil is known as Ottobratica and guarantees an exceptional, Mediterranean flavour. Alongside this olive variety, the very old Carolea and Roggianella varieties are also cultivated. The combination of these three olive varieties make for the quality and unique taste of this olive oil.

Production

Farmers begin harvesting the olives as early as November to obtain this fine Naturata olive oil from Italy. The harvest involves spreading large nets on the ground underneath the trees. A machine gently shakes the trees so that the olives fall to the ground to be caught in the nets. A further machine frees the olives from any leaves and branches. The olives are sorted, washed and pressed. Directly after harvesting, they are processed at the farm's own oil mill. The oil mill stands at the heart of the Azienda Agricola and is used exclusively to press the olives grown on the farm to make this precious oil. They are gently pressed without the application of heat at a maximum temperature of 27 °C. The olive oil obtained in this way is of an extremely high quality. The pure oil is stored in stainless-steel tanks and finally bottled on site only when an order is placed. This guarantees olive oil of the highest quality with a characteristic green fruity flavour.

Tips for preparation

No other edible oil offers such a variety of subtle variations in flavour (from mild through slightly bitter to fruity). As is the case with wine, the flavour depends directly on the variety, the area of cultivation, the time of harvesting and the climate. Olive oils can therefore be used in a variety of ways. Try it when preparing salads, tomatoes and pesto sauces, in pasta and vegetable dishes. Thanks to its characteristic flavour, olive oil is a popular choice for use in Mediterranean cuisine. In comparison with other virgin edible oils, olive oil is also suitable for frying, due to its fatty acid composition (thanks to the high proportion of stable, monounsaturated fatty acid, oleic acid).
