Production
The production method used for rice-pasta requires a lot of experience and skill. The process used for drying this pasta takes considerably longer and is far gentler than for durum wheat pasta, for example. Production itself comprises the following steps: Rice flour and water are mixed to form a homogeneous dough which is then pressed into shape through dies. Immediately after the pressing process, the pasta shapes are dried and then packaged. This gentle processing method preserves the valuable ingredients and makes the pasta particularly light and tasty.
Tips for preparation
Shape and consistency are strongly reminiscent of the familiar wheat pasta. When it comes to cooking, however, they differ due to the absence of the protein, gluten. The starch is more easily boiled out, and the cooking water bubbles more than with other pasta. Choosing a large pan, using sufficient water (at least 2.5 litres per 250 g of pasta) as well as stirring regularly help to produce good results. Naturata rice-pasta can be cooked as you wish, al dente or well-cooked.
