Production

To make the beet sugar, the organic sugar beet is first washed, crushed and cooked. The beet juice is cleaned and evaporated to produce syrup. A few sugar crystals are added to the concentrated juice, so that the sugar crystallises out. Then the molasses are separated off with the aid of centrifuges. In contrast to cane sugar molasses, this has an unpleasant and extremely intense flavour and therefore has to be removed completely ? which is why the beet sugar is so white. When the molasses are separated, other ingredients such as vitamins and minerals are also lost. The beet sugar is still considered to an unrefined sugar. It would be considered to be refined sugar (sugar of the highest purity) if, following the final processing step, it were to be treated again with steam (dissolved) and if this syrup were to be boiled again, centrifuged and crystallised out.

Tips for preparation

Naturata beet sugar is very fine and pale. This makes it ideal for pastries and for sweetening all kinds of dishes and drinks.
