The "flower of salt" is the most valuable sea salt. It is only formed on hot, windy days and is harvested by hand. The choice, relatively large salt crystals require no further processing. The sea water is channelled into flat saltpans and left to evaporate in the sun and wind. This leads to the formation of a fine salt crust on the surface of the concentrated salt solution. This "flower of salt" is carefully skimmed off the surface of the water by hand using a wooded shovel or a rake and then packaged by hand.

Tips for preparation

Fleur de Sel is particularly suited to seasoning and enhancing food at the table. It can be crumbled easily between the fingers.
