Naturata mayonnaise is made with only high-quality Demeter sunflower oil which has been pressed gently, without the application of heat (cold-pressed). Before processing into mayonnaise, the sunflower oil is deodorised using steam. As a result, the storability of the mayonnaise is improved and the delicate flavour of the mayonnaise itself is not masked by the aroma of the oil. To make Naturata vegan mayonnaise, the remaining ingredients are mixed with sunflower oil and thoroughly homogenized. The sunflower protein serves as an emulsifier which allows the fatty and watery ingredients (oil plus vinegar and water) to combine more effectively into an emulsion. This step requires a lot of experience and skill.
