The culture medium for propagating the yeasts consists of beet molasses. Mineral salts and vitamin preparations are added to the beet molasses to ensure optimum yeast growth. The resulting "cream yeast" is dried gently. Heated rotating roller drums are wetted with cream yeast. The heat causes the yeast cells to open, and the cell sap evaporates. As the heat is extracted during evaporation, the yeast is exposed to the temperature of just under 100 °C for only a few seconds. As a result, the ingredients in the yeast are hardly affected. The yeast flakes dry within a single turn of the roller drum. They are continuously scraped off the drum.
